Domaine Fournier Pere et Fils Les Belles Vignes Sancerre 2021. Coming from plots spread across the appellation’s terroirs, this is copybook Sancerre. Gently pressed grapes, a slow cool fermentation using indigenous yeasts, ageing on its fine lees and lightly filtered. Aroma-wise, there’s a concentrated citrus core with hints of white currant and a refreshing, cleansing acidity with a core of stony minerality.
