Domaine Daniel-Etienne Defaix Chablis Vieilles Vignes 2020. Not an oaked Chablis, although the extended lees stirring and ageing employed might suggest otherwise. This is an ‘old vine’ cuvee from vineyards of Kimmeridgian limestone. Hands-off winemaking in temperature controlled stainless steel includes said long-term batonnage and no fining or filtration beyond natural settling. This one will repay ageing to allow the wine’s pithy texture to get more complex and mealy/grainy. Rich, firm, with a streak of uppish acidity and flintiness.
