Romain Bouchard
In 2005 Romain Bouchard took over Domaine de la Grande Chaume, a Domaine of of 3.38 hectares of vines located in two beautiful areas. Right from the start, Romain introduced rigorous methods towards his viticulture with respect to nature in order to obtain the optimum quality of grapes.Much work is carried out in the vineyards to get the best out of each parcel (de-budding, crop thinning for example). No chemical products are applied to the vines and only natural products (copper and sulphur) and plant extracts are used to control pests and disease. Yields are strictly limited and grapes are picked by hand and carefully pre-selected before pressing.Vinification and maturation (twelve months minimum) take place in ideal conditions at the family winery of Pascal (Romain's father) Bouchard in Chablis. The domaine has been in organic conversion since 2007 (Ecocert) and this is the first AB certified organic vintage.
