Bolfan
Bolfan Vinski is situated in the municipality of Hrascina, in Croatia's Medimurje - Zagorje region. Historically, this is the heartland of viticulture in the country, with vine-growing dating back several centuries. Today the winery practices bio-dynamic farming and natural winemaking techniques under the expert guidance of head winemaker Luka Koscak, who has lived and worked among Croatian wine all his life.Bolfan's cellar and winery is situated in the middle of their vineyards, ensuring a quick transfer at harvest time between the vineyard and the winery, vital to retaining freshness in the wines. Grape must is settled without recourse to Sulphur Dioxide, and fermentation is carried out using natural yeasts grown on the estate under tight temperature control in order to retain freshness and aromatics.The vineyards lie on hillside sites, at altitudes ranging between 250-380m with a south / south-east facing aspect, ideal for the cultivation of high quality vines. Soils enjoy a naturally neutral PH level of 7.5 and consist of a combination of loose, free-draining loam, marl and limestone which encourages deep root systems, imparting much sought after concentration and minerality to the wines. All grapes are hand-picked, partly due to the difficulty of mechanically harvesting the hillsides, but more importantly to ensure a thorough and consistent selection process.
